Ingredients
  

2 lbs purple potatoes

4 tablespoons unsalted butter

1/2 cup whole milk (or plant-based milk)

Salt, to taste

Freshly ground black pepper, to taste

1/4 cup sour cream or Greek yogurt (optional)

Fresh herbs for garnish (parsley or chives)

Instructions
 

Prepare the Potatoes:

  • Wash and optionally peel the purple potatoes. Cut into even chunks.

Boil the Potatoes:

  • Place the potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil, then simmer for 15–20 minutes until fork-tender.

Mash the Potatoes:

  • Drain and return the potatoes to the pot. Mash with a potato masher or ricer.

Add Butter and Milk:

  • While warm, add butter and milk. Mash or mix until creamy.

Season:

  • Add salt, pepper, and optional sour cream or Greek yogurt. Stir well.

Serve:

  • Transfer to a serving bowl, garnish with fresh herbs, and enjoy!
