Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup dried cranberries
  • 1 cup shelled pistachios

Optional Add-ins:

  • Zest of 1 orange or lemon for a citrusy touch
  • 1/2 cup chocolate chips for extra indulgence

Instructions
 

Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Mix the Dry Ingredients:

  • In a medium bowl, whisk together the flour, baking powder, and salt.

Beat the Wet Ingredients:

  • In a large bowl, beat the eggs and sugar until light and fluffy. Stir in the vanilla extract and citrus zest (if using).

Combine:

  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Fold in Add-ins:

  • Gently fold in the dried cranberries and pistachios (plus any optional add-ins).

Shape the Dough:

  • On the prepared baking sheet, shape the dough into a long, slightly flattened log (about 12 inches).

First Bake:

  • Bake for 30-35 minutes, until golden brown and firm.

Cool and Slice:

  • Let the log cool for 10 minutes. Slice it into 1/2-inch thick pieces with a serrated knife.

Second Bake:

  • Arrange slices upright on the baking sheet. Bake for 15-20 minutes until crisp and golden.

Cool:

  • Transfer the biscotti to a wire rack to cool completely.
